Cochineal; The color that became an International Sensation

Cochineal, Dactylopius coccus, is a scale insect that resides and feeds parasitically on the pads of nopal , known as prickly pear cactus, which when processed produces a bright red color that was unknown to the conquering Spaniards. The insect produces carminic acid, the source of the pigment, which deters other predators and thus protects the insect. Only the female produces the color when she is crushed, sometimes along with eggs, either fresh or dried. Carminic acid can be mixed with aluminium or calcium salts to make carmine dye. It takes about 70,000 dried cochineal and around 25,000 fresh insects to produce 0.45 kg (one pound) of dye. Historically in Mexico it was primarily produced in the state of Oaxaca by the Zapotecs and Mixes at least three centuries before the arrival of the Spaniards. It was also cultivated to a lesser extent by the Aztec (Tenochtitlan) and Otomi (Hidalgo, México, Querétaro, Guanajuato, Puebla, Tlaxcala, Michoacán and Veracruz) cultures. The plant was bred to eliminate the spines on the cactus pads and was thus easier to cultivate for cochineal production. In addition to textiles, it was used for painting manuscripts as early as the thirteenth century.

Traditional (and non-traditional) production is a tedious labor-intensive process. Historically, the insects were sun dried, steamed or boiled, all which produced slightly different colors, prior to being ground into a fine powder.

Farming of cochineal takes place on a nopal farm, either by planting infected pads (which readily root, and thus are easy to propagate vegetatively, as is true of all species of Opuntia) and by infecting existing plants with hand placement of the insects. An alternative method consists of placement of small baskets, called Zapotec nests, on the pads. The baskets contain fertile females which then migrate from the baskets and infest the host plant. Both methods require protection from the elements for the entire three-month maturation cycle, at which time the new cochineals are allowed to reproduce and/or are collected by knocking or brushing the insects into an awaiting bag, after which they are usually sun or oven dried to obtain about 30% of their original weight, necessary for stable storage. Pest control is required throughout the entire cultivation process to ensure success of this coveted product. The dried, crushed insects are then sold to small local processors or exported.

Today’s producers may add aluminum salts are added as a precipitate to the carminic acid. By manipulating the pH and adding mordants, such as acidic lime, or metals salts, the color can be shifted to various shades. Lime juice produces purple while vinegar, also an acidic mordant, can shift the color to a brighter orange-red.

This pre-Hispanic, Oaxacan dye was an eye-opening surprise for the conquering Spaniards who quickly understood its value in European markets as no other comparable color existed in Europe at the time. It rapidly became the most lucrative Spanish colonial trade item following silver, especially coveted as a status symbol by the wealthy, which included the clergy. The monopoly was strictly controlled by the Spanish government until the 19th century when synthetic dyes became available.

The construction of the Church of Santo Domingo in Oaxaca City, originally a monastery and now a museum and ethnobotanical garden, was entirely funded by the sale of this dye. The museum houses an excellent exhibit on the bug and its rise to become an invaluable trade item. The gardens behind the museum are home to Opuntia ficus -indica, amongst dozens of other native species, so one can observe the scale insect on the host plant.

Peru is now the leading producer of cochineal with over 80% of the world’s supply followed by Mexico and the Canary Islands, all three industries being established by the conquering Spaniards. Chile and Argentina are also significant contributors to the current market.

These days it is a common food dye, listed as carmine or carminic acid or even cochineal extract. It is found in yogurt and countless other products including cosmetics.

As an interesting aside, the red uniforms worn by the British forces in the US Revolutionary War were primarily dyed with the roots of madder, although some wealthier officers preferred the brighter, more expensive red derived from cochineal. Of course they had the means to purchase the uniforms.

Mexico’s Six and Eight Legged Edibles

Mexico is renowned worldwide for its diverse and flavorful cuisine. However, there are some traditional foods in Mexico that you’re more likely to find on the end of a fly swatter or squished under a shoe in other countries. Insects and arachnids have long been a part of Mexican cuisine, adding unique textures and flavors to traditional dishes for those brave enough to try “entomophagy” – basically, eating bugs. And worms. And their babies.

Chapulines – Crunchy Grasshoppers: Perhaps the most famous insect in Mexican cuisine is the chapulín, a type of grasshopper. Native to the southern state of Oaxaca, chapulines are widely enjoyed for their crispy texture and savory taste. Often toasted or fried with garlic, lime, and salt, these delectable critters are commonly served as a snack or used as a flavorful garnish for dishes like tacos and quesadillas.

Escamoles – the Caviar of Ants: Considered a gourmet delight, escamoles are the edible larvae of the black ant species known as Liometopum apiculatum. Found primarily in the central region of Mexico, these ant eggs are often referred to as “insect caviar” due to their delicate flavor and creamy consistency. Typically sautéed with butter, garlic, and spices, escamoles are enjoyed in various dishes, including omelets, tacos, and even served on their own as a luxurious delicacy.

Ahuatle – More Mexican Caviar: In central Mexico, a few farmers still cultivate ahuautle, the egg of a rare flying bug (similar to a mosquito), to preserve a culinary tradition that dates back to the Aztec Empire. Said to have a “rich but delicate flavor,” ahuautle can be found on the menus of restaurants that strive to stay connected to their ancestors’ way of life. One chef serves a version of fried pancakes made with ahuautle, eggs, and breadcrumbs, accompanied by a green sauce comprised of tomatillo, nopales, and squash blossoms. Its name derives from the Náhuatl language, where “atl” means water and “huauhtli”, amaranth, so it translates as “water amaranth.”

Jumiles – Zesty Stink Bugs: Hailing from the southern state of Guerrero, jumiles are small, shiny beetles that possess a pungent aroma. Despite their unique scent, jumiles are highly esteemed for their tangy and slightly minty taste. They are often incorporated into salsas, moles, and other traditional sauces, adding a distinctive and bold flavor profile to the dishes.

Chinicuiles – Vibrant Maguey Worms: Known as the “red mezcal worm,” chinicuiles are bright red caterpillars (the larvae of the Comadia redtenbacheri moth) found on maguey plants, which are used to produce the renowned Mexican spirit, mezcal. These worms are harvested, washed, and traditionally pan-fried with garlic and spices; you can find them in glass bottles at a good mercado. They are sometimes consumed straight from the bottle alongside a shot of mezcal, providing an intriguing combination of flavors and textures.

Gusanos de Maguey – Spirited Treats: While not technically insects, the presence of mezcal worms, usually white, in the popular spirit’s bottles is worth mentioning. These larvae typically come from the Hypopta agavis moth, and their inclusion in mezcal bottles adds a touch of novelty. Although not traditionally consumed, some adventurous individuals choose to taste the worms, which have a smoky flavor and a slightly crunchy texture.

Chicatanas – Seasonal Flying Ants: When the rainy season arrives, so do the chicatanas – the large, winged ants that take flight in southern Mexico. These seasonal delicacies are collected, toasted, and ground into a paste or incorporated into sauces. With a distinctive flavor reminiscent of roasted peanuts, chicatanas lend a unique taste to dishes like tamales and moles.

Tarántulas – Arachnid Delicacies: Venturing into the realm of arachnids, certain regions in Mexico are known for their consumption of tarántulas, also called, like the stink bug, jumiles. Particularly popular in the state of Hidalgo, these giant spiders are cooked in various ways, including frying, grilling, or stewing. Despite their intimidating appearance, tarántulas are said to have a delicate, slightly nutty taste, making them a sought-after treat for the brave gastronomic explorer.

Scorpiones – Stingers on Sticks: Scorpions are typically deep-fried or grilled to ensure their venom is neutralized during the cooking process. The crispy, crunchy texture of the cooked scorpions provides an intriguing contrast to their delicate flavor. In certain regions, particularly in the state of Durango, scorpions are enjoyed as a snack, often dipped in chili powder or served with lime.

Mexico is famous for its culinary landscape, which thrives on diversity and incorporates unique ingredients that captivate the senses. From the crunch of chapulines to the creamy texture of escamoles and the bold flavors of jumiles, the country’s culinary traditions celebrate the richness of insects and arachnids. Six-Legged Saviors

I’ve seen visitors to Mexico visibly gag or turn away in disgust when offered a bowl of chapulines (fried grasshoppers) along with their guacamole. I’ve witnessed a few more daring travelers hesitantly touch their tongue to a margarita glass rimmed with sal de gusano (salt containing ground-up agave worm larva). But I’ve rarely seen a foreigner “chow down” on insects undeterred by their preconceived notions about eating bugs.

Most of us are disgusted by just the thought of bugs crawling around in the cabinet where we store our food and are horrified to see mealworm larva float to the top of our cereal bowl.

Eating two or four-legged creatures is fine, but add an additional pair of legs, and most westerners are “out.” “No, thank you, I’ll pass!”

But could it be that our social and cultural conditioning is preventing us from taking advantage of one of the planet’s most nutritious, eco-friendly, and sustainable sources of protein – insects?

For centuries, 80% of all the world’s cultures have been incorporating insects into their diets. Countries like the United States and Canada make up part of the 20% that are staunch holdouts to embracing the edible insect.

Over a hundred edible insect species are eaten in Mexico and there are almost 2,000 species of edible insect that humans around the world consume. Nearly two billion people eat insects as a regular part of their everyday diet. And for good reason.

Most edible insects are high in protein, low in saturated fat, and high in fiber. They contain various essential vitamins and minerals, including vitamin B12, vitamin D, phosphorous, iron, calcium, zinc, copper, magnesium, and manganese. And many are a one-stop-shop for all nine essential amino acids, and also contain omega-3 and omega-6 fatty acids, as well as antioxidants. According to http://www.Hey-Planet.com, “Insects contain almost all the nutritional benefits that you get from eating meat, fish, and rye bread – all at once!”

And if the nutritional benefits alone don’t convince you to start incorporating insects into your diet, perhaps the environmental ones will. The Food and Agricultural Association (FAO) of the United Nations points out that “Crickets need six times less feed than cattle, four times less than sheep, and twice less than pigs and broiler chickens to produce the same amount of protein … and they emit less greenhouse gases and ammonia than conventional livestock.”

In our post-pandemic world, we are facing new food-system concerns like supply-chain disruptions, food scarcity, and the rising cost of food, particularly meat. This, along with the ongoing climate crisis, has led many to suggest insect farming as a viable, environmentally friendly, and lucrative solution to all of the above problems.

Last year, the BBC featured insect farming in an online series focused on the future of food. The article stated that insect cultivation uses only a fraction of the land mass, energy, and water of traditional animal farming and has a significantly lower carbon footprint.

One reason for this is that insects can be farmed vertically, meaning that large high-rise warehouses can be used to grow tons of insects on a very small parcel of land. And farmed insects can be fed on what would otherwise be considered “waste” in other food industries, such as spent grain from breweries, food scraps, and other organic waste, which solves yet another problem.

Because insect farming does not require vast tracts of land, it can be done in and around large urban centers, so there’s no need to ship this protein-rich food source to where the majority of people live. This virtually eliminates the supply chain altogether.

Before making it to the consumer, most insect protein is ground into a fine powder, making it much more palatable and easier to incorporate into a mainstream diet. Imagine eating a delicious batch of coconut cookies that just happens to contain cricket powder or enjoying a protein-packed brownie made from silkworm larva flour. You’d probably never even know you were eating an insect, yet imagine the good you’d be doing your body and the planet.
